ACTIVE INGREDIENTS

MAKE: 35 cakes (20 gram each)

A. Easy sugar syrup

100 gram sugar
100 ml water
10 ml lemon juice (do not utilize lime juice as it can make the sugar bitter)

B. Durian pineapple filling

320 gram pineapple flesh (canned or fresh)
260 – 280 gram durian flesh (frozen or fresh)
60 gram sugar (can be adapted to taste)
15 – 30 ml easy sugar syrup (from A)

C. Dough – first design

70 gram saltless butter – really soft at space temperature level
30 gram cream cheese – really soft at space temperature level
60 gram light whipping cream
35 gram icing/ powdered sugar (should not be replaced with other kinds of sugar)
1 egg yolk medium sized (18 – 20 gram)
145 gram all function flour

D. Cookie dough – second design

120 gram saltless butter – extremely soft at space temperature level
35 gram condensed milk (can not be replaced with sugar)
1 egg yolk medium sized (18 – 20 gram)
150 gram all function flour

NOTES

2. Usage AP flour for this dish. Cake flour might lead to cakes that are too crumbly and delicate while bread flour might provide dry and difficult dough.

3. Basic sugar syrup can be replaced by corn syrup, maple syrup or maltose.
